Why are all Émulsion vinaigrettes opaque when there are also vinaigrettes on the market in which the different ingredients are visible?
The answer is in its name: there was an emulsion! Since water and oil are two liquids that do not mix, we use ingredients and equipment that allow us to mix them. This way we obtain an opaque, creamy and airy texture that doesn’t have ingredients settling and forming different layers. This is what we call an emulsion!
