Ingredients
- 1 pork tenderloin
- 150 g (1/3 lb) Brie cheese, rind removed, sliced
- 85 ml (1/3 cup) Émulsion Raspberry dressing
- 125 ml (1/2 cup) fresh raspberries
Preperation
- Cut pork tenderloin lengthwise.
- Brush the inside of the pork tenderloin with 30 ml (2 tbsp.) of dressing and place the Brie cheese slices on top.
- Close the pork tenderloin and tie to secure.
- Sear over high heat on all sides.
- Place in oven at 175°C (350°F) for 18 minutes. Let stand 5 minutes.
- Slice and garnish with dressing and fresh raspberries.
