- 1.25 L (5 cups) shredded romaine lettuce
- 2 hard boiled eggs, sliced into quarters
- 125 mL (1/2 cup) corn kernels
- 1 tomato, sliced into quarters
- 1 English cucumber, diced
- 190 mL (3/4 cup) sliced black olives
- 2 green onions, chopped
- 125 mL (1/2 cup) Émulsion Cranberry Citrus dressing
- 250 mL (1 cup) croutons
- 2 boneless, skinless chicken breasts
- Grill chicken breasts on the BBQ. Cut into thin slices.
- Place lettuce on a large serving plate. Arrange each ingredient in rows.
- Drizzle with dressing and garnish with croutons.
