- Type of dish : Dijon onion
- 1 kg (2 lb) new potatoes
- 1 red onion, chopped
- 2 celery stalks, diced
- 4 bacon strips
- 125 ml (1/2 cup) Émulsion Dijon Onion dressing
- Salt and pepper
- Bring the potatoes to a boil in a large pot of cold salted water. Simmer until tender. Drain, cool and slice in half. Set aside in a bowl.
- Meanwhile, in a large frying pan, cook bacon until crisp. Cut into pieces and add to potatoes.
- Stir in red onion and celery.
- Add dressing and mix well.
